VEGAN TRAVELS: Favorite Indian Food in Tennessee

This past Saturday, November 14th, was Diwali. Diwali is known as the Festival of Lights. This my first year learning about Diwali, and I am excited to learn more. I enjoyed hearing many stories of how Diwali is celebrated and the many awesome traditions that lead up to the main day. The traditions include shopping, preparing your home, spending time with family and friends, sharing gifts, and many beautiful lights and fireworks.  

Another part of the tradition is food! So, of course, this being a plant-based food blog and me being a lover of Indian food, I had to feature a few of my favorite Indian and Indo-Chinese plant-based dishes in celebration of Diwali. Here are the dishes I picked up from my favorite local restaurant, Café India.

Samosas: 

Usually served as appetizers, these fried pastries are filled with potatoes, peas, and delicious spices. Leftover chana masala from the curry fries recipe? Top the samosa with leftover chana masala, onions, and your favorite chutneys for a not so traditional samosa chaat.

Gobi 65:

I have to say, I am not the biggest fan of cauliflower. However, gobi 65 remains one of my go-to to-go orders. Gobi 65 is an Indo-Chinese dish. Fried cauliflower tossed in a spicy sauce made with ginger, garlic, and chili peppers. I typically order this with a side of basmati rice.

LENTIL SOUP:

I make lentil soup at home often. However, my lentil soup is never quite as good as the one I get from Café India. This yellow lentil soup is simmered with red chili pepper for just enough kick. It is warm, filling, and goes well with a side of basmati rice or a Bombay Club sandwich.

Bombay Club Sandwich:

This was my first time ordering the Bombay Club sandwich, but it won’t be my last! If you are on the lookout for a good vegetarian sandwich, try this. It 2 tier sandwich with potatoes on it. The sandwich also has seasoned mayo, green bell peppers, onions, and tomatoes. There are so many ways to customize this sandwich. I think I will recreate this one in the December recipe collection
