Not Your Average Chickpea Salad
I love a simple, flavorful sandwich. After transitioning into plant-based eating, I was down to the only two vegetarian sandwiches I knew how to make - a hummus wrap and chickpea salad sandwich. I didn't know much about the chickpea salad sandwich, so I stuck with the hummus wrap for months. I got bored and knew it was time to tackle the chickpea salad sandwich. A girl can't rely on one sandwich her whole life.
The first chickpea salad sandwich I made was horrible. It was flavorless with too much mayonnaise. Adding in onion, tomatoes, spices, and fruit didn't fix it. Nothing was hitting the spot. Feeling defeated by a sandwich, I vented about my failed attempts to my parents. They offered a faux chicken salad sandwich to ease my woes. Little did I know this sandwich would change my approach to the chickpea salad sandwich. I am so excited to share this recipe with you and, hopefully, help solve your chickpea salad sandwich challenges too.
It’s Just Chickpea Salad.
Did you read the title? This is not your average chickpea salad sandwich. It has a bit of kick and is full of flavor. I think this may be a theme in my posts lol. The kick is courtesy of my two not-so-secret ingredients - curry powder and cowboy candy. The curry powder was the added touch the chickpea salad was missing. It adds the "oomph" needed to balance out the sweet pickle relish and creamy vegan mayonnaise.
The cowboy candy was an unexpected find. Once I tried it with crispy potatoes, I wanted to add this awesome relish to everything, including my chickpeas salad sandwich recipe. Cowboy candy is made up of sweet pickled jalapeños. Think of bread and butter pickles but with jalapenos instead of cucumbers. This recipe is made with my dad's special cowboy candy recipe, but I can't give all the secret family recipes away! Luckily you can find cowboy candy online.
Ok, Let’s Make This Salad!
This one is SUPER easy. Add the chickpeas, mayonnaise, yellow mustard, sweet paprika, salt, pepper, and garlic to a medium. Mix until chickpeas are well coated with the mayonnaise and spices. Next, mash some of the chickpeas. I used a potato masher for this part. You can use the back of a spoon or a fork if you don't have a masher handy. I found that mashing the chickpeas after adding in the spices, mayonnaise, and garlic helps to infuse the mixture with all the flavor better.
Once everything is mixed and mashed to your desired consistency, add the remaining ingredients. Last, put the mixture into the fridge to chill. After about 15 minutes, it is ready to eat. Spread over your favorite bread and enjoy! This chickpea packs a flavor punch. Feel free to adjust the spices, cowboy candy, and relish in this mix to make it your own.

Not Your Average Chickpea Salad
Ingredients:
- 2 Cans chickpea - 15.5 oz, drained
- 1/2 C. vegan mayonnaise
- 1 Tsp yellow mustard
- pinch of salt
- 1 Tsp pepper
- 2 1/2 Tbsp cowboy candy
- 1 Tbsp sweet pickle relish
- 1/2 Tsp curry powder
Instructions:
- Add chickpeas, mayonnaise, yellow mustard, sweet paprika, salt, pepper, and garlic in a medium bowl. Stir to cover incorporate. Then, mash until desired texture.
- Dice cowboy candy. Add into the bowl along with relish and curry powder. Stir to incorporate.
- Cover and let sit in the fridge to chill.
