Bacon marinade

Que the music. By music, I mean whatever song lifts your spirits and makes you feel like Rocky Balboa. Yes, this marinade is that good!

After testing mixtures of spices and oils, we finally have the BEST bacon-flavored marinade I've ever tasted. Literally the best! And, just like that lady said on the Frank's Red Hot Sauce commercials, we're putting this on everything!

In the Plant-Based & Slayed test kitchen, we've tried this on a few different items, from spreads to sandwiches to mac & cheese. We're sharing two of our favorites with you for the October Collection - the DAT sandwich and Grits bowl. You will see more recipes using this marinade scattered throughout our future collections as well.

It’s Just A Marinade.

Yes, it's just a marinade… unless you don't eat bacon. If you are anywhere on the plant-based spectrum, you know how hard it is to replicate bacon flavor. Let me be clear - we don't want the meat, just the flavor. It's about replicating the sweet, salty balance that bacon provides.

The highlight of this mixture is Orrington Farms Ham Flavored Broth Base & Seasoning. This base has an amazing flavor that is not overly salty. Mixed with a few other ingredients, we stumbled upon a bowl of smoky, savory goodness.

I will share more recipes using Orrington Farms' full line of Vegan Broth Bases & Seasoning later. For now, let's get into this marinade.

Ok, I’m Convinced. Show Me the Bacon…Marinade!

This is a one-bowl recipe. Add all the ingredients into a bowl and whisk until combined. That is it. You're done! My only strong recommendation is not to swap out the olive oil or Orrington Farms broth base for another kind of oil or broth base. At least, not on the first try.

I keep this marinade in the fridge between uses. The oil will separate from the rest of the liquids and solidify on top. So, pull the marinade out of the fridge at least 30 minutes before use to allow the mixture to come to room temperature. Then, I whisk right before use.

This marinade replicates the sweet, salty flavor of bacon with a hint of ham. Use it to amp up the flavor in your plant-based spreads, protein, or even a mac & cheez topping.

Ingredients:

  • 1/2 C. olive oil
  • 1/4 C. liquid aminos
  • 2 Tsp liquid smoked
  • 2 Tsp dark brown sugar
  • 2 Tsp Orrington Farms ham broth base
  • 1/8 Tsp sweet paprika
  • 1/8 Tsp black pepper

Instructions:

  1. In a medium bowl, whisk together all the ingredients.
  2. Pour into an airtight container.
